Steak Kabobs with Cilantro Sauce

Incorporating various meat options and your favorite vegetables onto skewers, grilling, and enjoying a delightful dinner is easier than you might think. Although not mandatory, marinating the meat before skewering infuses additional flavors – a step I took with these tantalizing steak kebabs, complemented by a zesty cilantro sauce.
When it comes to kebabs, selecting the right cut of beef is crucial to ensure tenderness on the grill. While I opted for top sirloin in my kebabs, flank steak is also an excellent choice. I’ve experimented with both cuts, and both deliver fantastic results. While you can certainly grill kebabs without marinating, allowing them some time to soak in the marinade significantly enhances meat tenderness, resulting in juicier and more flavorful steak kebabs. In my view, grilling kebabs is the ultimate method, and with a few handy grilling tips, you’ll consistently achieve perfect kebabs.
Steak Kebabs with Cilantro Sauce
For optimal tenderness and flavor, let the meat marinate for a minimum of 1 hour, up to a maximum of 8 hours.
Ingredients
Steak Kebab Marinade:
- 1 pound of steak (flank or sirloin), cut into 1-inch cubes
- 1/4 cup of olive oil
- 4 cloves of garlic, minced
- Juice of 1 lemon
- 1 tablespoon of balsamic vinegar
- 1/2 teaspoon of sea salt
- 1/4 teaspoon of black pepper
Steak Kebabs:
- 1 yellow bell pepper, cut into 1-inch squares
- 1/2 red onion, cut into 1-inch squares
- 8 button mushrooms, ends removed
- 16 cherry tomatoes
- 8 wooden or metal skewers
Cilantro Sauce:
- 1 bunch of cilantro, stems removed (about 1 cup)
- 1/2 bunch of parsley, stems removed (about 1/2 cup)
- Pinch of red chilies (optional)
- 1 clove of garlic
- 1/3 cup of olive oil, plus more as needed
- Juice of 1 small lemon
- 1/2 tablespoon of red wine vinegar
- 1/4 teaspoon of sea salt
Instructions
- In a spacious bowl, combine the steak marinade ingredients and mix thoroughly. Add the cubed steak, ensuring it’s evenly coated in the marinade. Transfer the beef to a plastic bag or leave it in the bowl and refrigerate for 1 to 8 hours to marinate.
- While the beef is marinating, prepare the cilantro sauce. Place all the sauce ingredients in a blender and blend until you achieve a rich, creamy consistency. If the sauce is too oily, add more cilantro/parsley; if it’s too thick, thin it with a bit of olive oil. Season with additional vinegar and sea salt to taste, then set it aside.
- Once the beef has marinated, assemble the skewers by alternating between beef and vegetables. You should have enough ingredients for 8 skewers, each containing 4 pieces of beef, 1 mushroom, 2 cherry tomatoes, bell pepper, and red onion.
- Preheat the grill or BBQ to medium-high heat, approximately 450°F, and place the skewers on the grill for 8-10 minutes, turning them halfway through.
- After grilling, remove the steak kebabs from the grill and let them rest for 5 minutes before serving to retain their juiciness.
- Serve the kebabs while warm, accompanied by the cilantro sauce, and savor the deliciousness!
Notes
If you’re using wooden skewers, remember to soak them in cold water for approximately 30 minutes before grilling to prevent them from burning.
