  • Eggs – Swedish pancake batter requires more eggs than most American recipes. That’s what gives them their thin but fluffy texture. That said, if you try to substitute eggs (like with banana puree), they won’t turn out quite right.
  • Milk – The milk in the recipe keeps the pancake thin and light. I usually use 2% milk because it’s what I have on hand. However, any variety will work.
  • Flour – Stick to all-purpose flour for this recipe because it’s the easiest to work with and relatively inexpensive. And don’t be tempted to add more – the ratios are perfect.
  • White Sugar – Many Swedish pancake recipes don’t require sugar. However, I like to add it because it gives them a nice hint of sweetness. Feel free to leave it out if you prefer them more savory.
  • Salt – Salt is one of those ingredients that everything needs. Even sweet recipes like this benefit from a pinch of salt. Use regular kosher salt.
  • Butter – Be generous when greasing the griddle. Butter gives the pancakes phenomenal flavor and also prevents them from sticking or burning.

But in terms of taste and texture, crepes are denser and fluffier and can be sweet or savory. On the other hand, Swedish pancakes are lighter, fluffier, and almost always served sweet.

Both are thin, golden pancakes that people typically roll or fold to eat. But Swedes prefer them with jam or a sprinkle of powdered sugar.

Can You Freeze Swedish Pancakes?

Swedish pancakes freeze very well, as long as they are fully cooled before freezing. It’s best to stack them with parchment paper in between to prevent sticking. Then, put them in freezer bags, write the date on the front, and freeze them for up to one month.

This method is great because it allows you to take out one or two at a time without having to thaw the whole batch.

When it’s time to reheat them, you can do so in the microwave or on the stovetop.

For best results, let them thaw in the refrigerator overnight. If that’s not possible, let them sit on the counter for about 15 minutes before reheating.

If reheating on the stovetop, use medium heat and reheat for about a minute, flipping them halfway through.

You can also zap them in the microwave for 20 to 30 seconds. I use 50% power and heat two at a time.

Can You Make Swedish Pancakes in Advance?

Swedish pancakes store well in the refrigerator, making them perfect for preparing in advance. Simply cook and cool the pancakes, then stack them with parchment paper in between and store them in an airtight container in the refrigerator for up to three days.
