Flourless Chocolate Chip Blondies (Gluten-Free)

Crafted from a humble can of chickpeas, these delectable flourless chocolate chip squares are not only naturally sweetened but also gluten-free, offering a delightful and wholesome treat. Paired perfectly with a steaming cup of coffee or a comforting mug of tea, these gluten-free blondies or flourless chocolate chip squares are the ideal choice for a mid-afternoon snack.
Upon first consideration, using chickpeas in baking might strike you as unusual. However, I assure you, it’s a winning approach! Much like the concept of black bean brownies, these gluten-free chocolate chip squares are irresistibly gooey and embody everything you desire in a dessert. Surprisingly, the inclusion of chickpeas not only introduces fiber and plant-based protein but also contributes to the squares’ moist and tender texture. In this particular recipe, I’ve opted for dark chocolate chips, aligning with my nutritionist background. However, should you prefer milk chocolate chips, they would work equally well.
Flourless Chocolate Chip Squares
While I’ve used peanut butter in these gluten-free chocolate chip squares, alternatives like almond butter, cashew butter, or sunflower seed butter can be seamlessly substituted.
Ingredients
- 1 can (14oz) chickpeas, drained and rinsed
- 1/2 cup peanut butter, almond butter, or cashew butter
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon sea salt
- 1/3 cup chocolate chips
Instructions
- Preheat the oven to 350°F.
- Grease an 8 x 8-inch baking pan with either butter or coconut oil and set it aside. If you use a 9 x 9-inch pan, the squares will be slightly shorter in height.
- In a food processor or blender, combine all the ingredients (excluding the chocolate chips) and blend until thoroughly mixed, forming a thick and sticky batter.
- After blending, gently fold in the chocolate chips to ensure even distribution within the batter.
- Pour the batter into the prepared baking pan and use a spatula to evenly spread it across the pan.
- Place the pan in the oven and bake for 20-25 minutes, or until the top turns golden brown and a toothpick inserted comes out clean.
- Once baked, allow the gluten-free chocolate chip squares to cool completely before slicing them into 9 pieces.
- Store them in an airtight container for up to 5 days, or in the freezer for several months.
