- While the meatballs are cooking, prepare the sauce. In a medium saucepan, heat oil and sauté ½ cup chopped onion and 3 garlic cloves over medium high heat for 5 minutes or until onion softens.
- Add 1 ½ cups Guinness beer, tomato paste, barbecue sauce, brown sugar, Worcestershire sauce, mustard, and thyme. Bring to a boil, and then reduce heat to low and simmer for 10 minutes.
