These carrot cake energy bites feature a blend of dried dates and apricots in their ingredients. However, if necessary, you can omit the apricots and use a full cup of dates instead.
Ingredients
- 2 medium carrots, shredded (approximately 3/4 cup)
- 3/4 cup walnuts
- 3/4 cup pecans
- 3/4 cup dried dates
- 1/4 cup dried apricots, roughly chopped
- 1/2 tablespoon ground cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon ground nutmeg
- 1 teaspoon vanilla extract
- 1/8 teaspoon sea salt
- 2 tablespoons maple syrup (optional)
- 1/2 cup shredded coconut
Instructions
- In a food processor, combine walnuts, pecans, and spices; pulse until a coarse meal forms.
- Once the nuts are ground, add dried dates, apricots, vanilla extract, maple syrup (if desired), shredded carrots, and sea salt. Blend in the food processor until a thick paste is achieved.
