Cottage Cheese Pancakes

Ingredients
- 1 cup of cottage cheese
- 2 eggs, beaten
- 2 tablespoons of melted butter
- 1/2 teaspoon of vanilla extract
- 1 cup of all-purpose flour
- 2 tablespoons of sugar
- 1 teaspoon of baking powder
- 1/4 teaspoon of salt
- 1/4 cup of milk, plus more if needed
Instructions
- In a large bowl, combine the wet ingredients: cottage cheese, beaten eggs, melted butter, and vanilla extract.
- In a medium bowl, combine the dry ingredients: flour, sugar, baking powder, and salt.
- Combine the dry ingredients with the wet mixture and blend thoroughly. Add milk to the mixture and stir to achieve your desired consistency, adding more milk as necessary to thin the batter.
