Apple Cinnamon Pancakes

While any variety of apple can be used in this recipe, I find that apples with a slightly firmer and crisper texture, such as Royal Gala, Cortland, Honeycrisp, or Empire, work exceptionally well, as they maintain their structure during cooking. For the ultimate apple cinnamon infusion, I’ve included fresh apples in both the pancake batter and as a topping. However, you have the flexibility to choose one or the other if you prefer.
Apple Cinnamon Pancakes
These apple cinnamon pancakes are the epitome of lightness and healthiness. Serve them unadorned or top them with a luscious apple topping for an unbeatable weekend brunch.
Ingredients
Pancakes:
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 cup milk
- 2 tablespoons melted butter
- 1 egg
- 1 teaspoon vanilla extract
- 1 peeled and diced apple
Apple Topping (optional):
- 2 diced apples
- 2 tablespoons butter
- 1/2 teaspoon cinnamon
- 2 tablespoons maple syrup
Instructions
- In a medium bowl, combine flour, sugar, baking powder, salt, and cinnamon.
- In a large bowl, whisk together milk, egg, melted butter, and vanilla extract. Gently fold the dry mixture into the wet mixture and add the diced apple, being careful not to overmix the batter.
- Heat a griddle or pan over medium heat, melt a knob of butter, and, working in batches, pour 1/4 cup of batter onto the griddle or pan. Cook until bubbles form on top, then flip and cook for an additional 1-2 minutes on each side until golden brown.
- Repeat this process until all the batter is used, and keep the cooked pancakes warm in the oven at 200°F.
- Optionally, while the pancakes are cooking, prepare the topping. In a small pan or saucepan, cook butter, diced apples, and cinnamon over medium heat for 3-5 minutes until the apples become tender. Once tender, add maple syrup, stir to combine, and let it cook for an additional 1-2 minutes. If the mixture becomes too sticky, simply add a splash of water to loosen it.
- Once done, serve the pancakes with the apple topping and/or additional maple syrup.
