Pork Souvlaki
These Greek pork souvlaki skewers are a breeze to prepare and teeming with flavor. Pair them with fragrant rice, a classic Greek salad, and some refreshing tzatziki for a Mediterranean-inspired feast.
Ingredients
- 2 pork tenderloins (approximately 3/4 lb. each)
- 1/2 cup olive oil
- 1/4 cup lemon juice
- 2 cloves garlic, minced or crushed
- 1 tablespoon dried oregano
- Salt
- Pepper
- 8 skewers, metal or wooden
Instructions
- Begin by placing the pork tenderloins on a cutting board and cutting them into 2 cm (3/4 inch) cubes.
- In a spacious bowl, combine the olive oil, lemon juice, minced garlic, and dried oregano, whisking them together thoroughly.
- Add the cubed pork to the bowl, then use your hands or tongs to ensure it’s evenly coated with the marinade. Refrigerate and allow it to marinate for a minimum of 1 hour or, for enhanced flavor, up to 24 hours.
- Once the pork has marinated to perfection, thread the pork cubes onto skewers and generously season with salt and pepper on all sides. Discard any unused marinade.
- Preheat your grill or grill pan to medium-high heat, then add the skewers and grill for 3-4 minutes on each side, or until the pork reaches an internal temperature of 145°F.
- After grilling, remove the pork skewers from the heat and allow them to rest for a few minutes before serving.
